Vegan Easter Biscuits

Easter biscuits.

It’s Good Friday, so it seemed like some treats were in order. Vegan Easter biscuits are very quick and easy to make, and we’re now enjoying them with our afternoon tea.

100g (4 oz) margarine (make sure to check that you buy vegan margarine, as many brands contain buttermilk)
50g (2 oz) caster sugar
150g (6 oz) plain flour
1/4 tsp ground mixed spice
100g (4 oz) raisins

Cream together the margarine and sugar until a smooth mixture is formed. Add the flour, spice and raisins and mix until a dough is formed (it is easiest, and most fun, to do this with your hands!). If the mixture is a bit too dry and won’t form into a dough, add a tiny bit of water or sustainably-sourced soya milk to help bind it together. Make the mixture into small balls and place on a lightly-greased baking tray. Flatten with the back of a fork, then bake at 180 degrees C (Gas Mark 4/356 degrees F) for ten minutes, or until they are golden brown in colour.
