Fun, fireworks and fantastic feasting this bonfire night with Fiery Roasted Veg.

To really set yourself up to stand around the bonfire and “ooo” and “ahhh” to beautiful displays, the Great Primate Handshake has a simple and delicious recipe for you. This treat can either be an accompaniment, or as we like it, poured into a cone and taken to the show.

You will need:

1 Butternut squash

2 Potatoes

2 Carrots

2 Parsnips

½ Red onion

5 Cloves of garlic

Olive oil

Chilli flakes

Peel and dice the squash, potatoes, carrots and parsnips. Slice the red onion. Peel the outer shell from the garlic, but keep whole.

Place all veg into a roasting pan and coat in olive oil – stir the veg around to make sure everything is fully covered. Season well, with plenty of salt and pepper along with some chilli flakes, for that “fiery” kick.

Put in the centre of a pre-heated oven (180c) and roast for 30 mins. The smaller your pieces of veg, the faster they will cook – so keep an eye on them.

Once crispy on the outside and soft on the inside, pour into a homemade cone – thin cardboard cone, lined with greaseproof paper – and enjoy.
