Chunky Vegetable Soup

A quick and easy after-work meal, or delicious hearty lunch.

You will need*:

2 small Onions (chopped)

4 Carrots (chopped)

2 Parsnip (chopped)

1 Swede (chopped)

A handful of fresh parsley (chopped)

2L stock (I prefer vegan bullion)

Liberal amounts of salt and pepper to season.

*This soup will work well with any left over veg. Just chuck it all in a soup pot and see the magic happen. You could even add lentils, or pearl barley for that extra thick soup.


Oil a large soup pan and gently fry all of the chopped vegetables (sprinkle on some salt) and cover – fry gently for 5 minutes. Boil the kettle in preparation. Add the parsley and stir – fry for a further 1 minute.

Add the stock and cover. Leave to simmer gently for 20-30 minutes, or until the vegetables are to your liking, then serve with a slice of crusty bread. Delicious!
