Beetroot Burgers

Beetroot Burgers

The perfect “left-over” comfort food, that can be thrown together in minutes.

You will need:

3 Medium Beetroot (grated)

3 Small Spring Onions (finely chopped)

1tbsp Fresh Parsley (chopped)

¼ block of tofu (grated)

3-4 Slices of wholemeal bread (crumbed)

Salt

Pepper

Plain Flour

Olive Oil

Method:

Grate the beetroot and tofu into a bowl. Add the onion, parsley and breadcrumbs – season well with salt and pepper. Mix all ingredients together – if it’s too “wet” to hold together, add another slice of “crumbed” bread.

Sprinkle a liberal amount of flour on to a clean surface. Using clean hands, shape half a handful of mixture into a burger type patty shape. Coat in flour and firm the burger patty then place to one side. Continue with all of the mixture.

Heat olive oil in a frying pan over a medium heat and gently fry the patties until crisp.

Eat in a bun, with salad, or on their own, maybe with some home-made Tzatziki (made from soya yoghurt, of course!).
